A delicious one-dish meal featuring tender chicken breasts and a colorful array of veggies coated in zesty ranch seasoning and topped with melted cheddar cheese.
Ingredients: 4 chicken breasts. 1 packet ranch seasoning mix. 2 cups baby red potatoes, quartered. 2 cups broccoli florets. 1 cup baby carrots. 1 tablespoon olive oil. Salt and pepper to taste. 1/2 cup shredded cheddar cheese.
Instructions: Preheat oven to 375F 190C. In a large bowl, toss chicken breasts, potatoes, broccoli, and carrots with olive oil and ranch seasoning mix until well coated. Spread the seasoned chicken and veggies evenly in a baking dish. Season with salt and pepper to taste. Bake in the preheated oven for 25-30 minutes or until chicken is cooked through and veggies are tender. Sprinkle shredded cheddar cheese over the top during the last 5 minutes of baking. Serve hot, garnished with fresh parsley if desired.
