Tofu Scramble
So, this was my first time cooking without using any oil. Pretty proud of myself, came out really good! Here’s the recipe...
12 oz block of tofu
1 poblano pepper
1 red bell pepper
4 mushrooms, sliced
1/2 medium onion, small dice
4 oz vegetable broth, plus more for sauté.
1/2 tsp turmeric
1/4 tsp smoked paprika
1/8 tsp chipotle powder
1/2 tsp onion powder
1 tsp garlic powder
1 tsp dried parsley
2 tsp nutritional yeast
A pinch of Indian black salt/kala namak
Salt to taste
Press the water from tofu, set aside. Roast poblano and bell pepper in oven, place them in paper bag once finished roasting.
Crumble tofu. Mix all spices into veggie broth, allowing them to rehydrate before mixing broth/spice mixture into tofu.
Sauté/sweat onions in a splash of broth, cooking until translucent. While onions are cooking, remove skins from peppers, then chop. Add chopped peppers and mushrooms to onions, cooking until mushrooms are soft. Add tofu, cook until hot.
”Sautéed” Cabbage
1/2 of a small cabbage, thin sliced
1/2 of a red bell pepper, diced
1/2 of a poblano, diced
1 small onion, diced
1/2 cup vegetable broth
1 tsp garlic powder
1/2 tsp smoked paprika
Salt & pepper to taste
Add a 1/3 portion of veggie broth to a pan (I used enamel coated cast iron Dutch oven), once hot add onions and peppers, garlic powder and smoked paprika, cover and cook till soft, and onions are translucent. Add cabbage, stirring to mix onions and peppers. Season with salt and pepper and add remaining veggie broth. Cover and allow to cook down.
I can't believe how much Molly has grown! The first picture was taken the day I got her, she was roughly 7 weeks old. The second picture was taken this morning, she will be 6 months next Sunday.
I have totally been eating like garbage lately. I am going to change that today though. I am getting back on track with the oil free thing...
Tonight I am planning on making basalmic glazed baked tofu, cabbage, and basmati rice. I should be back with a recipe for my tofu and the cabbage.

This oil free thing is a lot harder than I thought.
I am trying to figure out how to make bhindi masala without using dalda (vegetable ghee), and without using veggie broth because then the okra will become a disgusting slime soup. If I figure it out I will be back with a recipe. If not, it looks like I will be making squash and rice for dinner tonight, meh.
