Known as sea grapes or green caviar in English, umibudou is a kind of seaweed farmed in Japan's Okinawa Prefecture and in the Philippines. It is considered a delicacy because of its unique texture: the tiny green capsules pop in the mouth, releasing a slightly salty flavor. In Japan, umibudou is usually served with vinegar and soy sauce, with sashimi, or in donburi (Japanese rice bowls).
