Ingredients: 1 lb pork shoulder, diced. 1 tbsp olive oil. 1 tsp chili powder. 1 tsp cumin. 1 tsp paprika. Salt and pepper, to taste. 4 cups mixed greens. 1 avocado, sliced. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped cilantro. 1 lime, cut into wedges. Optional toppings: shredded cheese, sour cream, salsa.
Instructions: In a bowl, toss the diced pork shoulder with olive oil, chili powder, cumin, paprika, salt, and pepper until well coated. Heat a skillet over medium-high heat and add the seasoned pork. Cook until browned and cooked through, about 8-10 minutes. While the pork is cooking, prepare the salad bowls. Divide the mixed greens among serving bowls and top with sliced avocado, diced tomatoes, diced red onion, and chopped cilantro. Once the pork is cooked, divide it among the salad bowls, placing it on top of the greens.
