Savory breakfast muffins are the perfect way to change up your breakfast on the go. Every Sunday, I prep most of my meals for the week but breakfast seems to be the hardest meal to switch up. These egg muffins have changed my world.
Instead of making my usual chai pudding or over night oats, I whipped up enough mini quiches to last the week (though my boyfriend won’t let them last that long). The following recipe is a great breakfast alternative to throw into your meal prep menu:
Ingredients
8 Whole eggs
2/3 cup egg whites (= 4 large eggs)
1/2 cup diced bell pepper
1/2 cup diced onion
1/2 cup diced scallions
3 diced mushrooms
1 cup shredded cheese
1/2 cup your favorite meat (I used leftover ground turkey)
S&P (salt and pepper)
Directions
Sauté onions, pepper and mushrooms in 1 Tbsp olive oil for about 5 mins. Set Aside
Whisk eggs in a medium size bowl until blended
Add cooked veggies, scallions, cheese,meat and S&P to egg mix
Fill paper-lined muffin cups 3/4 of the way full with mixture
Bake at 350° for 20 mins until quiches set and just golden brown
Let cool in pan for 10 mins before devouring 🍳🍴
