Vegan Curried Zucchini and Tomatoes from @wholelotta.yum. I added celery and mushrooms, just because I had those in the house. Being #lowcarbvegan (as opposed to low fat vegan) means I finally get to put #coconutmilk in #vegancurry when I cook it. The other kind still tasted good, but the addition of the #plantmilk makes this feel much more decadent.
