Turn up for sizzle-vision! Scrambled tofu with Chinese salt and pepper seasoning is sooo good. Really easy, just crumble tofu (not silken) and I used about 3 generous teaspoons of seasoning. I put a level teaspoon of coconut oil in for some fat content. I love the coconut oil pictured, because it 100% pure, odour and taste free, cold pressed and very cheap! The tofu in a jar is brilliant to have in the cupboard because it’s long life, doesn’t need a refrigerator until opened, tastes great and is a perfect portion for one. If you like to add an “eggy” flavour, just add some kala namak or black salt. If you want some colour, a pinch of turmeric will do that. I don’t feel it needs it personally. My first day of a three week Vegan Keto Reset. Trying to heal my gut after a year of pain, brain fog, etc etc.
For my first meal I made a salad of gem lettuce, (lots of) tahini, 1/4 avo, cucumber, hemp seeds, alfalfa, and dehydrated seed crackers.
I feel reasonably satisfied! Although I carb loaded last night knowing that I was going to be without rice, chocolate, bread... for at least twenty one days.
For dinner I’m going to make a “chicken” sheet pan curry but with tofu instead of chicken. It’s a recipe from GP’s cookbook.
Moving farther towards my goal...low carb and vegan/vegetarian. Love this!

What about vegan keto?
I can’t understand why anyone would choose to adopt a ketogenic diet unless it was medically prescribed as treatment for something like epilepsy, but honestly I really don’t have an opinion about any specific version of the vegan diet. What people choose to eat and how they manage their health is their own business, so long as they are vegan and they’re eating as ethically as they’re able to then the rest really isn’t my concern.
