This Fiesta Lime Shrimp Salad is a quick and healthy meal that tastes great and is full of bright colors. Bright lime dressing gives the soft shrimp and fresh vegetables a big taste boost. Your taste buds will love it!
Ingredients: 1 lb large shrimp, peeled and deveined. 1 tsp olive oil. 1 tsp chili powder. 1/2 tsp cumin. Salt and pepper to taste. 6 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1/2 cup corn kernels fresh or frozen. 1/2 cup black beans, drained and rinsed. 1/4 cup red onion, thinly sliced. 1/4 cup fresh cilantro, chopped. 1/2 cup shredded cheddar cheese. 1 avocado, sliced. 1 lime, juiced. 2 tbsp sour cream. 2 tbsp salsa. 1/4 cup tortilla strips optional, for garnish.
Instructions: Mix chili powder, cumin, salt, and pepper with olive oil in a bowl. Toss the shrimp in the bowl to cover them with the spice mix. Warm up a pan over medium-high heat. Add the shrimp and cook for two to three minutes on each side, or until they turn pink and opaque. Take it off the heat and set it aside. To make a salad, put mixed salad greens, corn, black beans, red onion, cilantro, and shredded cheddar cheese in a large bowl. Put cooked shrimp and avocado slices on top of the salad. To make the dressing, mix the salsa, sour cream, and lime juice together in a small bowl. Put the dressing on top of the salad. If you want, you can add tortilla strips as a garnish for extra crunch. Gently toss the salad to mix all the ingredients together. Serve right away and enjoy!
