Indulge in the refreshing blend of blueberries and creamy coconut milk, enhanced with decadent dark chocolate bits. This homemade ice cream is bursting with flavor and perfect for a hot summer day or any time you're craving a sweet treat.
Ingredients: 2 cups fresh blueberries. 1 13.5 oz can coconut milk. 1/2 cup sugar. 1 teaspoon vanilla extract. 1/4 cup dark chocolate chips or chunks.
Instructions: Fresh blueberries, coconut milk, sugar, and vanilla extract should all be put into a blender. Mix until it's smooth. Put the mixture into an ice cream maker and churn it according to the machine's directions until it's the consistency of soft serve. At the very end, when the machine is still going, add the dark chocolate chips or chunks and mix them in. The ice cream should be put in a container and frozen for at least 4 hours, or until it is firm. If you want, you can serve scoops of the blueberry coconut ice cream with extra fresh blueberries and dark chocolate shavings on top.
