This flavorful and nutritious stir-fried asparagus is ready in a flash. Enjoying the flavor of vibrant bell peppers and fresh asparagus in a flavorful stir-fry sauce is ideal. You can personalize it by adding your preferred protein or just savor it as a vegetarian dish.
Ingredients: 1 lb 450g fresh asparagus, trimmed and cut into 2-inch pieces. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 small red onion, thinly sliced. 2 cloves garlic, minced. 1 tablespoon vegetable oil. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon sesame oil. 1/2 teaspoon grated ginger. 1/4 teaspoon crushed red pepper flakes optional. Salt and pepper to taste.
Instructions: Combine the sesame oil, soy sauce, oyster sauce, grated ginger, and crushed red pepper flakes if using in a small bowl. Put aside. In a large skillet or wok, heat the vegetable oil over high heat. Stir-fry the minced garlic for about 30 seconds, or until fragrant. To the skillet, add the sliced red and yellow bell peppers as well as the red onion. Add the vegetables and stir-fry for 2 to 3 minutes, or until they begin to soften but remain crisp. When the asparagus is crisp-tender, add the pieces and stir-fry for an additional three to four minutes. After adding the sauce mixture to the stir-fried veggies, toss to ensure even coating. Simmer the sauce for a further one to two minutes, or until it slightly thickens. To taste, add salt and pepper for seasoning.
