Ingredients: 4 cod fillets. 2 tablespoons olive oil. Salt and pepper to taste. 1/4 cup coconut cream. 2 cloves garlic, minced. 1 tablespoon lemon juice. 1 teaspoon lemon zest. 1/2 teaspoon dried oregano. 1/4 teaspoon red pepper flakes. Chopped fresh parsley for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Put the cod fillets on a baking sheet that has parchment paper on it. Put some olive oil on top of the cod fillets and season them with salt and pepper. For 15 to 20 minutes, or until the fish is easy to flake with a fork, bake in an oven that has already been heated. Make the sauce while the cod is in the oven. Set the coconut cream on medium heat in a small saucepan. To the pan, add the oregano, red pepper flakes, lemon juice, and lemon zest that has been minced. Mix things together well. Let the sauce cook on low heat for 5 to 7 minutes, or until it gets a little thicker. Take the cod out of the oven when it's done cooking and pour the creamy lemon garlic sauce on top of it. Before serving, sprinkle with chopped fresh parsley. Enjoy your lemon garlic cod that is creamy!
