Sheet Pan Tofu Quinoa Burrito Bowls are a tasty and protein-rich way to make meals ahead of time. Roasted tofu, quinoa, and colorful vegetables all together make for a tasty and filling dish. Add your favorite toppings to make it your own, and enjoy a healthy lunch or dinner.
Ingredients: 1 cup quinoa, rinsed. 2 cups extra-firm tofu, cubed. 1 bell pepper, sliced. 1 red onion, thinly sliced. 1 cup cherry tomatoes, halved. 1 cup corn kernels. 1 can black beans, drained and rinsed. 2 tablespoons olive oil. 1 teaspoon cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste. Fresh cilantro, for garnish. Lime wedges, for serving.
Instructions: Turn on the oven and heat it up to 400F 200C. Mix tofu cubes with cumin, chili powder, garlic powder, salt, and pepper in a large bowl. Lay the tofu out on a baking sheet that has been lined with parchment paper. Turn the pan over halfway through the 20 minutes of baking. In the meantime, follow the directions on the package to cook the quinoa. Put the corn, bell pepper, red onion, cherry tomatoes, and red onion in a different bowl. Add some olive oil and salt and pepper to taste. Place the partially cooked tofu on a baking sheet and add the vegetable mixture on top of it. After mixing well, put the dish back in the oven for another 15 to 20 minutes, or until the vegetables are soft. You can heat the black beans on the stove or in the microwave while the vegetables are roasting. Split the cooked quinoa between the containers for meal prep. Add the roasted tofu and vegetable mix on top. Put a scoop of black beans into every jar. Serve with lime wedges on the side and fresh cilantro on top. To make easy, healthy meals ahead of time, seal the containers and put them in the fridge.
