This year's Lughnasadh dinner: Zucchini pie. I'll admit, this is the sabbat where I tend to struggle most cooking-wise. It's the first of Wicca's three harvest festivals, yet often the weather here in San Diego is sweltering hot well into September/October. So the question is, what to make that will honor summer coming to a close at a time when it seems to drag on where I live, and when my tummy is craving both light, summery meals and starting to fantasize about the heartier stuff of fall and winter? Luckily, one of the foodie TikTokers I follow, kathyquad123, posted this recipe for zucchini pie a few days ago and I decided that would be it, served along with corn muffins and blackberry pie for dessert. I'd never heard of zucchini pie before, but one bite of this and I knew it'd be a keeper. The filling in taste and texture reminds me a lot of Boston Market's creamed spinach, which has been one of my favorite sides there since I was a kid. And the topping? Crushed Ritz crackers mixed with melted butter. Yum! Zucchini Pie For the Filling: 3 medium zucchinis Half a large yellow onion 3 eggs, beaten 2 t. dried parsley 2 t. salt 1 t. black pepper 1 t. minced garlic 1/2 cup Parmesan cheese 1/2 cup oil 1 cup Bisquick For the Topping: Half a sleeve Ritz crackers Half a stick of butter, melted Preheat the oven to 350 degrees F. Grease an 8X8 casserole dish. Grate the zucchinis and place them in a bowl lined with paper towels. Squeeze out the excess liquid, then place them back in the mixing bowl. Grate the onion and add it in as well. Beat the eggs and add them to the zucchini and onion. Add the remaining ingredients and mix to combine. Pour into your prepared dish. Crush the Ritz crackers into fine crumbs. Place them in a bowl, then pour over the melted butter. Mix together with your hands, then sprinkle over the zucchini mixture.
