Ingredients: 2 lbs beef stew meat. 1 onion, chopped. 2 cloves garlic, minced. 1 cup beef broth. 1 14.5 oz can diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste. 2 cups cooked rice.
Instructions: In a large pot, brown the beef stew meat over medium-high heat. Add chopped onion and minced garlic, cook until onion is translucent. Pour in beef broth and diced tomatoes with their juices. Stir in dried thyme, dried oregano, salt, and pepper. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 1.5 to 2 hours, or until the beef is tender. Serve over cooked rice.
