These spring roll sheets are simple to make at home and work great with all of your favorite spring roll recipes. They are crispy, thin, and keep their shape well after being filled and fried.
Ingredients: 1 cup all-purpose flour. 1/2 cup cornstarch. 1 1/2 cups water. Pinch of salt.
Instructions: Put all-purpose flour, cornstarch, and a pinch of salt in a bowl and mix them together. Add water little by little and mix until a smooth batter forms. Warm up a pan that doesn't stick over medium heat. Add a little batter to the pan and quickly swirl it around to make a thin sheet. For about two minutes, or until the edges begin to come away, cook. Be careful to take the sheet out of the pan and set it down on a clean surface. Stack the sheets on top of each other and repeat the process with the rest of the batter. After all the sheets are cooked, let them cool down completely before you use them.

Ingredients: 1 cup shredded taro. 1/2 cup shredded carrots. 1/4 cup chopped green onions. 1/4 cup chopped cilantro. 1 clove garlic, minced. 1 tsp ginger, minced. 1 tsp soy sauce. 1 tsp sesame oil. Salt and pepper to taste. 20 vegan dumpling wrappers. 1/4 cup water for sealing dumplings. Oil for frying optional.
Instructions: In a mixing bowl, combine shredded taro, shredded carrots, chopped green onions, chopped cilantro, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well. Take a vegan dumpling wrapper and place a spoonful of the taro mixture in the center. Dip your finger in water and moisten the edges of the wrapper. Fold the wrapper in half to create a half-moon shape and press the edges together to seal the dumpling. You can use a fork to crimp the edges for a decorative touch. Repeat this process for the remaining wrappers and filling. To cook the dumplings, you can either steam them for about 10 minutes or pan-fry them in a lightly oiled pan until they are golden brown and crispy on both sides. Serve the vegan spring rolls with shredded taro dumplings with your favorite dipping sauce, such as soy sauce or sweet chili sauce. These rainbow spring rolls are a burst of colors and flavors in every bite. They are perfect for a light and refreshing meal or as an appetizer. Packed with fresh vegetables, herbs, and vermicelli noodles, they are as nutritious as they are delicious.
Ingredients: 6-8 rice paper wrappers. 1 cup cooked and cooled vermicelli rice noodles. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 cucumber, julienned. 1 carrot, julienned. 1 ripe avocado, thinly sliced. 1 cup purple cabbage, thinly sliced. 1/2 cup fresh mint leaves. 1/2 cup fresh cilantro leaves. 1/4 cup roasted peanuts, chopped optional. Soy sauce or hoisin sauce, for dipping optional.
Instructions: Prepare all the ingredients and have them ready for assembly. Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Place it on a clean, damp kitchen towel or a non-stick surface. Layer a small amount of vermicelli noodles on the lower third of the rice paper wrapper, leaving space on each side to fold. Add a few slices of each of the bell peppers, cucumber, carrot, avocado, and purple cabbage on top of the noodles. Sprinkle with fresh mint leaves, cilantro, and chopped peanuts if desired. Fold the sides of the wrapper over the filling, then gently roll up from the bottom, keeping it tight but not too tight to avoid tearing the wrapper. Repeat with the remaining ingredients. Serve the rainbow spring rolls immediately with soy sauce or hoisin sauce for dipping. Enjoy your super refreshing and entirely colorful rainbow spring rolls!
