Ingredients: 2 cups cooked chickpeas. 1 cup roasted carrots. 1-inch piece of fresh ginger, peeled and chopped. 2 cloves garlic, minced. 1/4 cup tahini. 2 tablespoons olive oil. 2 tablespoons fresh lemon juice. 1/2 teaspoon ground cumin. 1/2 teaspoon ground coriander. Salt and pepper to taste. Sesame seeds and chopped fresh cilantro for garnish.
Instructions: In a food processor, combine the cooked chickpeas, roasted carrots, chopped ginger, and minced garlic. Add the tahini, olive oil, fresh lemon juice, ground cumin, ground coriander, and a pinch of salt and pepper. Process the mixture until smooth and creamy. If needed, add a bit of water to achieve your desired consistency. Taste and adjust the seasonings, adding more salt, pepper, or lemon juice as desired. Transfer the carrot and ginger hummus to a serving bowl. Garnish with sesame seeds and chopped fresh cilantro. Serve with pita bread, veggie sticks, or as a spread for sandwiches and wraps.
