Onion Tomato Uttapam is a savory South Indian pancake made with fermented dosa batter and a tasty mix of tomatoes, onions, and green chilies on top. People in India love this dish for breakfast, and it's known for having great flavors.
Ingredients: 1 cup dosa batter. 1/2 onion, finely chopped. 1 tomato, finely chopped. 2-3 green chilies, finely chopped. 1/4 cup fresh coriander leaves, chopped. Salt to taste. Oil for cooking.
Instructions: Heat a non-stick griddle or tava on medium heat. Grease the griddle with a little oil and spread a ladleful of dosa batter to form a thick pancake-like base. Sprinkle chopped onions, tomatoes, green chilies, and coriander leaves evenly on top of the batter. Press the toppings lightly into the batter with a spatula. Drizzle a little oil around the edges and on top of the uttapam. Cook on medium-low heat until the bottom becomes golden brown and crisp. This may take 2-3 minutes. Flip the uttapam gently and cook the other side until it turns golden brown and cooked through. Remove from the griddle and serve hot with coconut chutney or sambar.
