Looks like we'd better go ahead and get the last couple of pieces of that strawberry cheesecake pie I made out of the way--because Mr. C has just gone and baked another one! 😁
Fresh out of the oven. And I could not resist bringing that ancient abomination back, now that I remembered it. 😆
This time he brought home some raspberries and blueberries that looked good, for another go at the same type of pie as that cherry one he made recently.
That is a translated link, btw, though it doesn't show up on the title preview. It's also not exactly the recipe he used, but looks pretty close--and like it would make a pretty awesome pie!
You can use basically any kind of fruit you want, including frozen if you add on a few minutes baking time. But, it looks like fresh raspberry and blueberry is a rather popular seasonal combination here.
Pretty much any fairly neutral tasting flour should also sub in just fine to make it gluten free. It's basically just there to help hold the oats together. His version also just used melted butter stirred into the dry ingredients, instead of messing around with cutting it in cold. Much less work, and it turned out good before.
This time, he did nearly double the amount of his crumble crust mixture for the pans we've got. So, there was enough left for the top! (That linked recipe looks like it should fill a decent-sized pan already, though.) And he was happier with the results, this try.
It's looking and smelling great, and I'm looking forward to trying some later. That would probably be even better warm with some vanilla ice cream, but we'll just have to make do with more vaniljsås and/or spray cream. 😋
