Recipe drawer app is on the app stores now Coffee and chili spareribs Ingredients 2 Tbsp fine coffee grounds 2 Tbsp kosher salt 1 Tbsp dark brown sugar 1 tsp ground cumin 2 tsp Aleppo or Korean pepper 1 tsp freshly ground black pepper 2 racks St. Louis-style spareribs Directions In a small bowl, combine all the dry rub ingredients. Rub both sides of the ribs with the rub and wrap in plastic wrap. Refrigerate overnight. Unwrap the ribs. Light the smoker and bring the temperature up to 225°F. Add some chunks of wood and place the ribs in the smoker, meat side up. Smoke 3 to 5 hours or until the meat begins to pull away from the bone and the ends of the bones have a dry appearance. Remove from the smoker and rest 3 minutes before serving. Makes 4 to 6 servings. If using a grill, follow the seasoning and marinating instructions. Heat the grill to high, then grill both sides of the ribs, about 6 to 7 minutes per side with the lid closed. Remove the ribs and wrap them in foil. Turn off half the burners and put the ribs on the coolest side of the grill. Continue cooking with the lid closed for an additional 1-1/2 to 2 hours at 335°F to 350°F.
