Classy Joes
Tonight I made Sloppy Joes and challenged myself to class 'em up. The meaty filling (I use this term loosely) was hearty and delicious yet not overly heavy. IÂ used:
1 cup of Smart Ground
1 carrot, chopped finely
1 onion, diced
1 teaspoon extra virgin olive oil
1 can (14 oz) crushed tomatoes
1 teaspoon cumin (because I love cumin in everything)
1/2 teaspoon salt
spinach (optional) or anything you'd like to eat it on
For this recipe I simply added the onions and oil to a skillet until the onions were browned (about 3-4 mins). I then added the rest of the ingredients and let it simmer until the carrots were soft and the skillet smelled awesome.
I enjoyed eating this over some spinach but it could definitely be served on a roll/toast/pasta etc. I always say this, but Smart Ground is delicious and definitely worth a try, even if you're not vegan.Â
