Shukto : 'Shukto' : A plethora of vegetables, cooked in the most unique spices with creamy milky gravy with the slightest hint of sweetness and a core taste of bitterness, even describing the dish is such a pleasure. Shukto falls under the category of legendary Bengali cuisines. This is one of the most complex of all Bengali recipes that I have cooked so far. Permutation combination of only two spices and the concentration of the cook while cooking are the key ingredients of this recipe. You simply cannot cook this recipe without the bitter gourd as one of the veggies . The other unique vegetables which add their signature taste to Shukto are plantain or unripe green banana, drumsticks or daanta and sweet potatoes, raw papaya, brinjal and potatoes. The fried lentil dumplings or bori is another delightful part of Shukto which adds a nice bite to the dish . Combination of black mustard seeds paste, poppy seeds paste, ghee, radhuni and paanch phoron is the main tricky part behind such authentic rich aroma of shukto. I always use milk (no water) to cook this recipe. Salt and sugar to taste. Chilies are not used in this recipe, and, that is it's uniqueness. The gravy needs to be slightly creamy, slightly sweet but mostly savory and absolutely not hot (jhal) . Also it is very essential to retain the shape of the vegetable chunks. So, it's better to avoid overcooking. Garnished with shredded coconut.
