I made Stephen Stills’ Shepard’s pie last night! I couldn’t find good vegan ingredients at 11pm, so I went more traditional, and it turned out amazing. The base consists of onions, carrots, celery, and garlic sautéed in white truffle olive oil, followed by a splash of red wine and a pound of lamb. The potatoes are flavored with a black truffle butter, and the whole thing went into the oven at 400°F for about 15 minutes. The house smelled AMAZING at 2am, and the gentle rain outside added a nice touch.
