This was a very special meal; the first one we cooked! We're trying to be vegetarian for the weekdays, so it's very experimental, but this turned out great! One of the first things we bought was frozen sweetcorn, and we wanted to use it, so we found this recipe on bbcgoodfood.com ! It's for Cheesy bean and sweetcorn cakes with quick salsa, and it took us about 10 minutes to prepare and 20 minutes to cook - although if you eat them as you cook them it's much faster. This is especially good if you have a small frying pan!
We don't have a picture, sadly, as that was before we decided to keep this blog, but we can offer tips!
Mixed beans and chickpeas are about £1.20 from Asda.
If you can't get jalapenos in a jar, one fresh one normally works fine - but adjust to taste (we stole our medic housemate's >o>)!
Frozen sweetcorn is cheaper in total and tastes better than canned sweetcorn.
Use two normal tomatoes instead of cherry tomatoes, and chop into rough chunks.
For the coriander, we bought an actual plant - which started our collection! They're cheap in Asda and Lidl, and means you don't have to worry about buying more or rotting in the cupboard (or a very overstocked fridge :/)! Just take them out of the packaging as soon as possible, and water and place in a sunny place as soon as you get it home. Try to take leaves from the side of stems, and tear, don't cut. Remember to give it breaks - a couple of days between using the leaves!
When cooking the patties, we have to use two spatulas, and make sure that you cook them for 4 minutes on each side or they will fall apart.
