Indulge in the velvety richness of this creamy vegan acorn squash soup, made with roasted acorn squash, carrots, and a touch of coconut milk. It's a comforting and nourishing dish perfect for chilly days.
Ingredients: 2 medium acorn squash, halved and seeded. 2 large carrots, chopped. 1 onion, chopped. 4 cloves garlic, minced. 4 cups vegetable broth. 1 cup coconut milk. 2 tablespoons olive oil. 1 teaspoon ground cumin. 1/2 teaspoon ground cinnamon. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Put the cut side of the acorn squash halves on a baking sheet that has been lined with parchment paper. Squash should be roasted in a hot oven for 40 to 45 minutes, or until it is soft. Take the squash out of the oven, scoop out the flesh, and set it aside. Put olive oil in a big pot and heat it over medium-low heat. It will take about 5 minutes of cooking after adding the chopped onion and carrots. Add the ground cinnamon, cumin, and minced garlic. Cook for another one to two minutes, until the spices start to smell good. Put in the vegetable broth and raise the heat. Add the roasted acorn squash flesh to the pot and mix it in. Let the soup simmer for 15 to 20 minutes so that the flavors can mix. You can blend soup until it is smooth and creamy with a regular blender or an immersion blender. Add the coconut milk and season with salt and pepper to taste. Simmer for five more minutes, then take the pot off the heat. If you want, you can serve it hot with a drizzle of coconut milk and a sprinkle of ground cinnamon on top.
