So in my headcanon, a lot of pre-warp species have entered the proverbial ‘galactic stage’ since the fall of the Romulan Empire. Do you think a Romulan would ever be involved with a distinctly non-humanoid species? Either romantically, in a friendship with one, or hiring them into a position of trust as a like a personal assistant?

First thing first : I think Romulans are likely to engage with ANY species as long as they bring them benefits. The "engagement" itself can take many forms : Blackmail, stalking, emotional manipulation, deals, you name it… Let's say most of these interactions usually don’t go beyond political or commercial interest, as those pointy eared-gremlins are prone to keep distance with foreign species ("stranger danger" y’know).
So, in my opinion, it’s possible for a Romulan to keep a non-humanoid individual on their shortlist. Though I’m not saying they’d trust nor respect them. You know how Romulans are…But heh ! You never know : They’re still highly emotional species so things might change over time !
Romulan hybrids already happened in the lore, thus I don't see why a non-humanoid wouldn't receive favors from the green-blooded. Whether in a romantic, friendly, or purely political way!
EDIT : They'd DEFINITELY use a non corporeal being as spy. THEY'D ABSOLUTELY DO THAT.
