Ingredients 1 1/8 cup warm water 3 cups all-purpose flour, or bread flour 3 tbsp brown sugar 1 1/2 tsp instant yeast Baking Soda Water Bath 2 quarts HOT water 1/2 cup baking soda Optional 1 egg (for egg wash) Instructions Add the warm water, flour, brown sugar, and instant yeast to your bread machine in the order listed, ensuring that the dry ingredients are added last. Set your bread machine to the 'dough' setting and let it work its magic. Once the dough cycle is complete, turn the dough out onto a lightly floured surface and divide it into 6 equal sections. Roll each section into a long rope, keeping it at least 1 inch thick. Cut each rope into 1-2 inch pieces, setting them aside as you go. For the baking soda water bath, pour HOT water into a large bowl and stir in the baking soda until dissolved. Using a large slotted spoon, dip 3-4 pieces of dough into the baking soda bath for 10-15 seconds. Remove them with the spoon and place the pretzel bites on a parchment-lined baking sheet. Preheat your oven to 425°F (220°C). If desired, brush each pretzel bite with a mixture of 1 beaten egg and 1 tbsp of water (this egg wash will help achieve a golden brown crust) and sprinkle with coarse salt.
