Trust me, it’s not a dumb question. I’m sorry if this gets long.
In games where players can play as both healers and damage dealers, a pocket (pocketing) is a single-target healer who chooses one (or favors one) other player and heals and supports specifically them for the whole match. This is very common in games where healing is a beam and when a damage dealer has a lot of damage dealing power, but few defenses or a large health pool.
A good example of pocketing (aside from Overwatch) is Team Fortress 2, where the Medic tends to pick 1 Heavy and heal/Ubercharge them for a push in, to generally devastating effect. (Side note, this has gotten so well known in TF2 that the Heavy has an unlockable cosmetic that’s a shirt pocket with a tiny Medic doll in it.)
Mercy is referred to as a pocket queen because she’s consistently the best single target healer in the game, and so is a popular pocket. Pocket queen is also derived from Pharah’s rocket queen motif, so in the ship context, it makes sense.
