Ingredients: 4 large potatoes, cut into fries. 2 tbsp olive oil. 1 can black beans, drained and rinsed. 1 avocado, diced. 1 cup vegan cheese, shredded. 1/4 cup vegan sour cream. 1/4 cup pickled jalapenos, chopped. 1/4 cup red onion, diced. 1/4 cup fresh cilantro, chopped. Salt and pepper, to taste.
Instructions: Warm the oven up to 425F 220C. Add salt and pepper to the fries and toss them in olive oil. Place them on a baking sheet that has been lined with parchment paper. Flip the fries over every 25 to 30 minutes and bake them until they are golden brown and crispy. Take the fries out of the oven and put them on a serving dish when they are done. Add vegan cheese, vegan sour cream, pickled jalapenos, red onion, fresh cilantro, and black beans to the top of the fries. Serve right away and enjoy!
