Enjoy a delicious low-carb pizza with a cauliflower crust that's crispy on the outside and tender on the inside. This recipe is perfect for those looking to reduce their carb intake while still satisfying their pizza cravings.
Ingredients: 2 cups cauliflower florets. 1/2 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 1/4 cup almond flour. 1/4 teaspoon garlic powder. 1/4 teaspoon dried oregano. 1/4 teaspoon salt. 1 egg. 1/2 cup sugar-free pizza sauce. 1 cup shredded mozzarella cheese for topping. Your choice of low-carb pizza toppings e.g., pepperoni, olives, bell peppers. Fresh basil leaves for garnish.
Instructions: Preheat your oven to 425F 220C. Place the cauliflower florets in a food processor and pulse until they resemble fine crumbs. Transfer the cauliflower crumbs to a microwave-safe bowl and microwave for 4-5 minutes, until soft. Allow the cauliflower to cool, then place it in a clean kitchen towel and squeeze out as much moisture as possible. In a mixing bowl, combine the cauliflower, 1/2 cup shredded mozzarella cheese, Parmesan cheese, almond flour, garlic powder, dried oregano, salt, and egg. Mix until a dough forms. Line a baking sheet with parchment paper and press the cauliflower dough into a 10-inch circle, making sure it's evenly spread and not too thick at the edges. Bake the cauliflower crust in the preheated oven for 15-20 minutes, or until it turns golden brown and firm. Remove the crust from the oven and spread the sugar-free pizza sauce evenly over it. Sprinkle 1 cup of shredded mozzarella cheese over the sauce and add your choice of low-carb pizza toppings. Return the pizza to the oven and bake for an additional 10-12 minutes, until the cheese is bubbly and slightly golden. Remove the pizza from the oven, garnish with fresh basil leaves, and let it cool for a few minutes before slicing and serving.
