Delicious and tropical, these Pineapple Cake Pops are a delightful treat for any occasion. The combination of pineapple cake, cream cheese, white chocolate, and toasted coconut creates a burst of flavor in every bite.
Ingredients: 1 box pineapple cake mix. 1/2 cup vegetable oil. 3 large eggs. 1 cup crushed pineapple, drained. 1/2 cup cream cheese, softened. 1 cup white chocolate chips. 1 tablespoon coconut oil. 1 cup shredded coconut, toasted for coating. Lollipop sticks.
Instructions: Preheat the oven to 350F 175C. In a bowl, mix the pineapple cake mix, vegetable oil, eggs, crushed pineapple, and cream cheese until well combined. Scoop out small portions of the batter and place them on a baking sheet. Bake for 15-18 minutes or until a toothpick inserted comes out clean. Let the cake balls cool. Melt white chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth. Insert a lollipop stick into each cake ball, then dip into the melted white chocolate, coating it completely. Roll the cake pop in toasted shredded coconut while the chocolate is still wet for an extra layer of flavor and texture. Place the coated cake pops on a parchment-lined tray to set. Once the chocolate coating is hardened, your Pineapple Cake Pops are ready to be enjoyed!
