Ingredients: 1 lb chicken breasts, diced. 2 tbsp olive oil. 3 cloves garlic, minced. 1 onion, diced. 1 red bell pepper, diced. 1 can 14 oz diced tomatoes. 3 cups chicken broth. 8 oz penne pasta. 1/2 cup fresh basil leaves, chopped. Salt and pepper to taste. Grated parmesan cheese for serving.
Instructions: Toast the bread in a large pan or pot over medium-low heat. Put in the diced chicken breasts and cook until they turn brown. Slice the onion and red bell pepper and add them. Cook the vegetables until they get soft. Add the chicken broth and diced tomatoes and mix well. Bring to a low boil. Put the penne pasta in the pot and mix it in. Cover and cook, stirring every now and then, for 12 to 15 minutes, or until the pasta is al dente. Add chopped basil leaves to the pasta after it's done cooking. Add pepper and salt to taste. Grate some Parmesan cheese on top and serve hot.
