Ingredients: 2 cups couscous. 1 lb lamb stew meat, cubed. 2 onions, chopped. 2 carrots, diced. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon ground cinnamon. Salt and pepper to taste. 4 cups chicken broth. 1 cup chickpeas, cooked. 1/2 cup raisins. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh mint, chopped. Lemon wedges for garnish.
Instructions: In a large pot, heat olive oil over medium-high heat. Add the lamb cubes and brown them on all sides. Remove from the pot and set aside. In the same pot, add chopped onions and carrots. Saut until they start to soften. Stir in minced garlic, ground cumin, ground coriander, ground cinnamon, salt, and pepper. Cook for a few more minutes. Return the browned lamb to the pot and add chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 1 hour or until lamb is tender. While the lamb is simmering, prepare couscous according to package instructions. Fluff the cooked couscous with a fork and set aside. Once the lamb is tender, stir in chickpeas and raisins.
