Another day, another #Jin … this #mioroshideba is off to a new home. I always enjoy working on these. Every time someone orders one, I get to clean it up, polish it, sharpen it, and make it pretty and ready for use. It’s a lot of fun. Sadly, this one is already sold, but you can see what we have left in stock on the website. The maker of these knives passed away some years back now, but his approach to knife making was unique… truly sole authorship knives, and utilizing a high tungsten tool steel I haven’t seen used in any other kitchen knives. It’s quite tough and durable and has excellent edge retention (it’s not stainless though).
