Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 cup cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup chocolate chips. 1/2 cup mint chocolate chips. Mint Buttercream Frosting:. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 1 teaspoon peppermint extract. 2 tablespoons milk. Green food coloring optional.
Instructions: Preheat your oven to 350F 175C. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and mint chocolate chips. Scoop the cookie dough onto a baking sheet lined with parchment paper or a silicone baking mat. Bake the cookies for 10-12 minutes or until the edges are set but the centers are still slightly soft. Today was just a normal day at work with my mom nowhere around since it’s almost CNY. I decided to leave office early as tomorrow is the last working day of my good SQM friend at office and I need to buy something to bid him farewell. Lucky I have a friend who shared the same idea and since it was also one of our good QA colleague’s farewell today, we decided to buy her one too even though we are a day too late and just try to drop it by her house later on the next day. Apparently, we roam around the mall and ended up with the idea of laptop bags given that not much stuff can be helpful in covid times for any outdoor thingys. The designs at Hush Puppies were really good and the funny thing is, there’s a big promotion going on and so we got a free gift from the shop - so the story goes that the next one to leave J&J will have that small gift in advance (cost-cutting, ehh?) but we do hope it’s a girl as this is a ladies purse from the shop - and ohh yeah, we might have an idea who this person may be. QA office is really in a bad shape, huh? 🤔
But before going home, I saw M&S food shop so I decided to grab my long time cake cravings but at the end of it, I chose this box of chocolate mints as it has a CNY greeting and it is something unknown to me - might as well try this than the ol’ reliable.
