This frozen dessert, plum semifreddo, is delicious. The sweet plums and creamy whipped cream make it a great combination. For a cool treat on a hot day, it's great.
Ingredients: 500g ripe plums, pitted and chopped. 150g granulated sugar. 4 large egg yolks. 300ml double cream. 1 teaspoon vanilla extract.
Instructions: In a saucepan, combine the chopped plums and granulated sugar. Cook over medium heat until the plums are soft and syrupy, about 10 minutes. Let cool completely. In a heatproof bowl, whisk the egg yolks until pale and thick. In another bowl, whip the double cream until soft peaks form. Fold in the vanilla extract. Gently fold the cooled plum mixture into the whipped cream. Gradually fold the whipped cream and plum mixture into the beaten egg yolks until well combined. Pour the mixture into a loaf tin lined with parchment paper. Smooth the top with a spatula. Cover with cling film and freeze for at least 6 hours or overnight until set. To serve, remove from the freezer and let sit at room temperature for a few minutes before slicing. Enjoy!
