A tasty and healthy quinoa casserole full of veggies, protein, and cheese that has been melted. Great for a healthy meal!
Ingredients: 1 cup quinoa, rinsed. 2 cups vegetable broth. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels, frozen or canned. 1 bell pepper, diced. 1 cup cherry tomatoes, halved. 1 cup shredded cheddar cheese. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Preheat oven to 375F 190C. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed. In a large mixing bowl, combine cooked quinoa, black beans, corn, bell pepper, cherry tomatoes, cheddar cheese, cumin, chili powder, salt, and pepper. Mix well. Transfer the mixture to a greased casserole dish. Bake in the preheated oven for 20-25 minutes or until the edges are golden and the cheese is melted and bubbly. Remove from the oven, let it cool for a few minutes, and garnish with fresh cilantro. Serve warm and enjoy!
