๐ Lemon sole with braised courgettes and fennel ๐ This is a great recipe for using up the last of the summer's tomatoes and courgettes. Lemon sole is a delicate, sweet white fish which goes perfectly with the sweet fennel salty and capers. ~ Ingredients: 2 lemon sole fillets 2 courgettes, sliced 12 cherry tomatoes, halved 1 red onion, finely sliced 1 tsp fennel seeds 2 garlic cloves, finely sliced 2 tbsp capers 1 lemon, juiced Handful of dill, chopped ~ Directions: Heat some oil in a non stick frying pan over a medium heat, add the fennel seeds, red onion and capers and fry for 5 mins until softened. Add the garlic, tomatoes and courgettes, then stir and sautรฉ for another 5 minutes. Add half the lemon juice and 100ml of water then simmer down for a few more minutes. Set the pan to one side, add the dill and stir together.
