While we were in the middle of our lavender bud harvest, we experienced a heat wave! Lavender blossoms do not provide much value to a lavender farmer. Our still can only produce 4 gallons of hydrosol per 24 hours. We scrambled to find processing options! @seafoamlavender mentioned that lavender blossom jelly is a great way to process the blossoms! We hand lovingly harvested the blossoms one by one by hand, steeped in a vessel of our artisian well water and tested. Wow! A bougie item for your charcuterie board! Pairs well with Brie cheese, makes a fabulous glaze for your plank salmon, a refreshing ice cream topper or stir a half teaspoon in your plain Greek yogurt for a flavor burst!
