Kosumalli is the best food you'll ever taste in the whole wide world. Ok, not so much. I stole those lines from a 5 year old in my prep 2 class. Anyway kosumalli is a must try for all those brinjal haters. It commonly makes its appearance at breakfasts in chettiar homes. You can eat it with dosas, idlis or if table manners were never your thing, you can slurp them off the plate like I do. I think slurping off a plate is a uniquely south Indian art, but I'll write about that later. Here's what you'll need for the kosumalli: 4 brinjals A few shallot onions Curry leaves Cumin seeds Mustard Few red chillies A pinch of asafetida 1 tomato chopped 1 potato - hang on, that's optional A pinch of turmeric A bit of tamarind paste - again, optional. Serves two people with normal appetites. Pressure cook the brinjals and the potatoes too if you are using them. I'm still on the fence about the whole are potatoes good or bad argument, so my kosumalli is usually potato-less. Wait until one whistle and take out the potatoes. And finely chop, chop, chop them. Mash the brinjals well. You could bin the brinjal peels but I usually like them in my kosumalli. Heat a pan and add some oil. Sauté mustards, cumins, red chillies, shallot onions, curry leaves and asafetida. Add the chopped tomatoes and sauté until their juices come out. Add the mashed brinjal mixture and the chopped potatoes. Add some turmeric. Finally add tamarind paste, salt as needed and if you have slurping plans, add some water to make it soupy.
