Enjoy a tasty Thanksgiving meal that is still keto-friendly with these low-carb recipes! This menu has all the tastes of Thanksgiving without the guilt. There are tasty turkey meatballs, creamy mashed cauliflower, and rich chocolate brownies.
Ingredients: 1 lb ground turkey. 1/2 cup almond flour. 1/4 cup grated parmesan cheese. 1 egg. 1 tsp dried sage. 1/2 tsp garlic powder. Salt and pepper to taste. 1/2 cup sugar-free cranberry sauce. 1 head cauliflower. 2 tbsp butter. 1/4 cup heavy cream. 1/2 cup shredded cheddar cheese. 1/4 cup chopped fresh parsley. 4 slices bacon, cooked and crumbled. 1 cup almond flour. 1/4 cup cocoa powder. 1/2 cup erythritol. 1/2 tsp baking powder. 1/4 tsp salt. 1/3 cup melted coconut oil. 2 large eggs. 1 tsp vanilla extract.
Instructions: Preheat oven to 375F 190C. In a bowl, mix together ground turkey, almond flour, parmesan cheese, egg, sage, garlic powder, salt, and pepper until well combined. Form the mixture into small meatballs and place on a baking sheet lined with parchment paper. Bake meatballs in the preheated oven for 15-20 minutes or until cooked through. In a saucepan, heat sugar-free cranberry sauce over low heat until warmed through. Meanwhile, steam cauliflower until tender. Drain and transfer to a food processor. Add butter, heavy cream, cheddar cheese, and parsley to the cauliflower in the food processor. Pulse until smooth and creamy. Season with salt and pepper to taste. Transfer mashed cauliflower to a serving dish and top with crumbled bacon. For dessert, in a bowl, mix together almond flour, cocoa powder, erythritol, baking powder, and salt. Stir in melted coconut oil, eggs, and vanilla extract until a smooth batter forms. Pour batter into a greased 8x8 inch baking dish. Bake in the preheated oven for 20-25 minutes or until set. Allow the brownies to cool before slicing and serving.
