It's more the delivery than the actual line itself, but they're a whole package for me. From the first time I watched it ~16 years ago to my most recent watch in February, I have never stopped being tickled by the was Saito flicks his hand as he leans out. He's the most sombre presence in the film, and this is one of the few times where acts with some levity. With my ship goggles on, I also think it's him showing off for Cobb. Him casually using the door to knock down a hired gun also shows that he would be no slouch as a tag-along tourist in the main mission.
He's an awesome actor and an all-around good person, thoughtful and considerate, creative and passionate. Listening to him talking always gives me joy, and it gives me new perspectives about different topics. I just love him.

A headcanon for how two characters interact (i.e. hobbies, inside jokes).
Ariadne and Arthur (+ Eames)
Post-Inception they become best buds. It's not something that happens consciously. Especially after the debacle with the Cobbs, Arthur tries to keep his distance from people he works with (except Eames, because even if Arthur tried to, Eames wouldn't let him) but Ariadne can't stay away from Dreamshare and Arthur kinda takes her under his wing: it'll be easier to keep an eye on her if he gets her on jobs he's organising instead of her working with more dubious and possibly dangerous characters on her own. Plus, after having to put up with imbecile architects for so long, it's like a breath of fresh air to be working with someone like Ariadne whose builds are like a dream (pun very much intended).
Ariadne, being the nosy, tenacious little thing that she is, drags Arthur out of his shell bit by bit, job after job. They go on coffee/food runs together, start staying at their office-of-the-week long after everyone else has left, talking about art and architecture and bitching about current or past colleagues, and their conversations slowly morph into favourite movies and music and what-not. Arthur ends up teaching her some basic self-defence between jobs or when they go under together and they start grabbing drinks after jobs and meeting whenever Arthur is in Paris and have a running joke about that time Arthur kissed her. She pesters him to go out to bars and clubs with her (for the first few times she has to manipulate him by appealing to that protective side of his that Arthur keeps hidden so well). Soon, she doesn't even have to ask a second time. Sometimes even, Arthur is the one to suggest they go out or to take a breather lest Arthur gives in and murders their chemist/forger/extractor/Eames with a paperclip and, without Arthur realising, he's suddenly got adopted by this tiny extrovert who reminds him that there is more to life than working and running for your life.
He doesn't really want to share her friendship, feels weirdly protective of what they've got, but once Ariadne gets a hint of what's going on between him and Eames she's like a dog with a very juicy bone. Maybe she's even the reason those two finally get their heads out of their asses and finally start dating, so Eames, to Arthur's annoyance, becomes part of their little group (Eames knows not to take up all their time together, though, so he tries to not impose on their friendship and to let them bond over mindless action movies, drinks and too-sweet snacks).
In the end, Arthur and Ariadne become known in the Dreamshare community as the AA duo--if these two are on your team, you have to try very hard or fuck up tremendously for the job to go sideways.

BACKROOMS!! I couldn’t have been the only one to immediately think of the dreamscape when the backrooms’ existence was revealed.
A place conjured from memory and existing information, entities who resemble a loved one, the insides of still lifes… guys.
Kane’s use of the concept of limbo was especially remarkable and really ties everything together so freaking nicely. I could go on about these two movies forever.
