Easy and satisfying! . Quick recipe/Serves 2: Take 1lb cauliflower florets & steam over a pot with boiling water for 10-15 minutes until very tender. . While thatās going, heat a non-stick skillet to medium with a tbsp olive oil. Take a large boneless skinless chicken breast and cut it from the center to form two even flat pieces. Combine 1/2 cup superfine almond flour, 1tsp salt, 1tsp smoked paprika and 1/2 cup Parmesan cheese powder on a large plate. Crack a small egg into a bowl, beat it and pour over chicken to coat. Dredge chicken in Parmesan mixture until evenly coated on both sides. Shallow fry 2-3 minutes per side, remove from skillet. . Lower heat and add the juice of 1 small lemon, 2tbsp butter, 2tbsp capers (mine are the large kind but anything goes), 1tsp dill. Gently whisk (Yay my butter didnāt break and actually thickened the sauce!) and spoon over chicken. The reason I donāt put the chicken back into the pan is because I want it to stay crispy. . PurĆ©e steamed cauliflower with 1-2tbsp sour cream, season to taste.
