Lembas from Lord of the Rings (Gluten Free, Paleo version)
Here’s a classic from the fan food community! There are many different variations of this, so I decided to make my own after finding some almond meal on sale. And hence, uh, it accidentally ended up gluten free and paleo.
I made it for my mum’s birthday as part of a whole LOTR-themed feast, with a grazing platter that included raw fish (smoked seabass) for Smeagol, (because I always found it terrible that the Hobbits wouldn’t give him things he could eat!), sausages and po-tay-toes.
How I decided on the ingredients and Recipe under the cut for dashboard users!
Lembas is supposed to be made with the nuts of the Mallorn tree, so using almond meal felt like a good way to replicate it.
As for the wrapping, I saw that a lot of existing recipes used banana leaves, but that didn’t really float my boat given that elven forests seem to be in temperate climates. Ideally, it would have been magnolia leaves (the type that Hoppa miso is made with), as it is a fruiting tree like the Mallorn, but I was unable to procure any. Hence, I went with bamboo, which also has anti-microbial properties to help keep things fresh! Japanese bamboo leaves are really expensive, so I got some that were meant for wrapping Chinese rice dumplings (粽叶)that could be bought online cheaply ($5 vs $36 for the japanese ones)
Also, to make it paleo because the elves are so long-lived they would have lived in ancient times, I used honey as a sweetener instead of sugar.
I also decided to add pumpkin spice, because the first time I had it (when I went to the US), it reminded me of all the magical fantasy foods that I read about in western fantasy books.
Also, most lembas is flat and squarish, so that’s why I went with a shallow pan. You can make taller versions of this, just bake it longer.
Ingredients
Dry
2 cups almond flour (500ml in total)
1 tsp baking powder
1/2 teaspoon baking soda
1 tbsp pumpkin spice (optional)
Wet
3 eggs
1/2 cup (250ml) honey
1 tsp vanilla essence
Method
1. Combine all the dry ingredients in one bowl and mix thoroughly.
2. In another bowl, beat the eggs and then mix in the other wet ingredients thoroughly.
3. Slowly pour the wet ingredients into the dry ingredients until you get an even mixture.Â
4. Preheat your oven to 200 Celcius.
5. Line a shallow baking pan with baking paper, and pour the mixture in.
6. Bake for about 30mins or until a toothpick comes out clean when you poke it in.
7. Remove from oven, cool, and trim to a square shape.
8. Wipe bamboo leaves with a damp towel, let dry, and wrap it.
9. Bring it on a long journey to Mount Doom or have it in a themed feast and enjoy!

I'll be cooking the breakfasts, quiche, soup, stuffed mushrooms, roast lamb with veggies and rice, tilapia. Haven't decided yet whether we will be watching lotr series or hobbits.
