Herb Bread
I mostly make this with the herbs in my garden, so you can change the herbs if you have others, or change it up seasonally! These work best with fresh herbs, but dry herbs work just as well.
Ingredients
For the yeast proof:
β‘ 1 1/4 cup warm water
β‘ 2 tblsp sugar or honey
β‘ 2 1/4 tsp dried yeast
For the bread:
β‘ 3 cups gluten free flour
β‘ 1/4 cup flaxseed meal
β‘ 1 tsp baking powder
β‘ 1 tsp salt
β‘ 1/4 cup olive oil (or other oil of your choice)
β‘ 3 eggs, room temp
β‘ 1 tsp apple cider vinegar
Recommended herbs:
β‘ Sage
β‘ Thyme
β‘ Rosemary
β‘ Dill
β‘ Basil
β‘ Parsley
Instructions
β Line an 8Γ5 inch metal loaf pan with parchment paper. Spray with cooking spray
β Mix together yeast proof and set aside for at least 5 minutes but no longer than 10
β In a stand mixer, mix together dry ingredients
β Add wet ingredients (including yeast proof) and herbs while it mixes, let mix at medium speed for about 2 minutes or until mixture is sticky
β Put dough in loaf pan and smooth down the top. Cover it with oiled plastic wrap and let sit in a warm area to rise for about an hour.
β Preheat oven to 350Β°F
β Remove plastic wrap and place bread in oven. Bake for 30 minutes, then cover in aluminium foil and bake for an additional 30-35 minutes.
β Let cool before serving.
