Ingredients: 2 cups cooked chicken, shredded. 1 can 10.75 oz condensed cream of chicken soup. 1 cup sour cream. 1 cup shredded cheddar cheese. 1/2 cup diced onion. 1/2 cup diced bell pepper. 1/4 cup grated Parmesan cheese. 1/4 cup chopped parsley. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. Salt and pepper to taste. 2 cups frozen hash browns, thawed.
Instructions: Preheat oven to 350F 175C. In a large mixing bowl, combine cooked chicken, cream of chicken soup, sour cream, cheddar cheese, onion, bell pepper, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper. Spread the thawed hash browns evenly on the bottom of a greased 9x13 inch baking dish. Pour the chicken mixture over the hash browns, spreading it out evenly. Bake in preheated oven for 25-30 minutes, or until bubbly and the cheese is melted. Garnish with additional chopped parsley if desired before serving.
