A hauntingly delicious bean dish perfect for Halloween or any spooky occasion. The addition of creepy eyeballs turns a simple bean recipe into a fun and festive treat.
Ingredients: 2 cans of black beans, drained and rinsed. 1 cup diced tomatoes. 1/2 cup sliced black olives. 1/4 cup diced red onions. 1/4 cup chopped fresh cilantro. 1 tablespoon olive oil. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. Canned whole black olives for eyeballs.
Instructions: Warm up the olive oil in a big skillet over medium heat. Add the chopped red onions and cook until they become transparent. Stir in chili powder and ground cumin and stir until fragrant, one to two minutes. Add chopped cilantro, diced tomatoes, black olives, and black beans. Blend thoroughly. To taste, add salt and pepper for seasoning. Simmer for ten to fifteen minutes to let the flavors combine. Cut whole black olives in half to make spooky eyeballs while the beans are simmering.
