This simple pesto pasta bake is a vegetarian main dish which is perfect for feeding a crowd. Giant pasta shells are stuffed with a creamy ricotta and pesto filling then baked with homemade tomato sauce and mozzarella.

Everything is better when you make it from scratch! Although my angel hair pasta had more of a resemblance to ramen, it was super flavorful. Flavorful because of the time and dedication it took to transform the eggs and flour into something so plush and mouthwatering. Having to hand crank these delicate sheets of pasta into thinly strings of Italian bliss gave me such a rewarding feeling. But it doesn’t stop there. My own hands used a mortar and pestle to create a refreshingly bright pesto using basil picked fresh from the vine, almonds, roasted garlic, coarse kosher salt, a pinch of lemon juice + zest and to bring it all together, the best damn olive oil my wallet can afford.
