For dinner tonight I did a little grill action 🔥 - Getting ready for Memorial Day weekend 🇺🇸 - For the Chicken I did a simple marinade: 1/4 cup Hughes Sugar Free Barbeque sauce, 4 TBL spoons extra virgin olive oil, 1/4 melted butter stick, 3 TBL spoons No sodium Fiesta Brand Chicken Fajitas season 2 tsp onion & garlic powder and 1 tsp liquid smoke. For the Beef fajitas: 1/4 cup beef stock, 3 TBL spoons Fiesta Brand Uncle Chris's seasoning, 2 tsp onion & garlic powder, 2 tsp liquid smoke, 2 tsp worscestershire sauce and 4 TBL spoons lime juice. Marinade for 2-4 hours flip half way through. Turn heat up to high to clean grill and use half a onion to scrub the grill and season it with a pair of tongs. Then reduced heat to medium. Cooking time on grill for Beef fajitas about 5 minutes per side then remove from heat to rest should give you a nice pink center line. For the chicken sear about 7 minutes per side. Only flip chicken after cooking time per side to avoid ripping. Then move to a low heat on foil sprayed with non-stick grilling spray for about 15 more minutes.
