These grilled zucchini roll-ups are a tasty and low-carb appetizer or snack. They're filled with a flavorful cream cheese mixture and smoked salmon or turkey, making them perfect for keto-friendly diets.
Ingredients: 2 medium zucchinis, sliced thinly lengthwise. 1/4 cup cream cheese. 2 tablespoons grated Parmesan cheese. 1 tablespoon chopped fresh basil. 1 tablespoon chopped fresh parsley. 1/4 teaspoon garlic powder. Salt and pepper to taste. 6 slices of smoked salmon or turkey breast. 6 fresh basil leaves.
Instructions: Preheat grill to medium-high heat. In a small bowl, mix together cream cheese, Parmesan cheese, chopped basil, chopped parsley, garlic powder, salt, and pepper. Lay out zucchini slices on a flat surface and spread a thin layer of the cream cheese mixture over each slice. Place a slice of smoked salmon or turkey breast on top of each zucchini slice. Add a fresh basil leaf on top of the salmon or turkey. Roll up each zucchini slice and secure with a toothpick. Place the zucchini roll-ups on the preheated grill and cook for about 2-3 minutes per side, or until grill marks appear and the zucchini is tender. Remove from the grill and serve immediately.

Instructions: Preheat grill to medium-high heat. In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, oregano, basil, salt, and pepper. Brush the zucchini slices with the prepared marinade on both sides. Place the zucchini slices on the preheated grill and cook for 3-4 minutes on each side, or until grill marks appear and zucchini is tender. Remove from grill and serve hot.

Salt and pepper to taste. 4 slices of provolone cheese optional.
Instructions: Preheat grill or grill pan over medium-high heat. In a bowl, mix zucchini, bell peppers, and red onion with olive oil, balsamic vinegar, basil, thyme, salt, and pepper. Grill vegetables for 3-4 minutes on each side until tender and slightly charred. Toast the slices of bread on the grill for about 1 minute per side. Assemble sandwiches by layering grilled vegetables on toasted bread slices, adding provolone cheese if desired. Top with remaining bread slices and press gently.
