The lemon and rosemary marinade for these grilled beef kabobs makes them taste great. The beef has a tangy flavor from the citrus marinade, and the rosemary gives it a lovely earthy smell. Peppers and onions add color and flavor to these kabobs. They are sweet and smokey. It's great for a summer barbecue or a nice dinner any time of the year.
Ingredients: 1.5 pounds of beef sirloin, cut into 1-inch cubes. 1/4 cup of fresh lemon juice. 2 tablespoons of olive oil. 2 cloves of garlic, minced. 2 tablespoons of fresh rosemary leaves, chopped. Salt and black pepper to taste. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into chunks. Wooden skewers, soaked in water for 30 minutes.
Instructions: Mix the olive oil, minced garlic, chopped rosemary, and lemon juice together in a bowl using a whisk. Put the beef cubes in a plastic bag that can be closed again and again. Season them with salt and black pepper. Place the beef in the bag, add the marinade, and seal it up. Put it in the fridge for at least two hours, or overnight for the best results. Warm up the grill over medium-high heat. Put the beef cubes that have been marinated on the soaked wooden skewers one at a time, then add the bell pepper chunks and red onion pieces. Use the rest of the marinade to brush on the kabobs. Turn the kabobs over every so often for about 8 to 10 minutes, or until the beef is done the way you like it and the vegetables are charred and soft. Take them off the grill and give them a minute or two to rest before you serve them. If you want, you can add more rosemary to the top of the hot grilled beef kabobs before serving.
