A chili lime marinade makes these skewers taste even better. They have sweet pineapple and succulent shrimp on them. Perfect for a BBQ party!
Ingredients: 1 lb large shrimp, peeled and deveined. 1 ripe pineapple, cut into chunks. 3 tablespoons olive oil. 2 tablespoons fresh lime juice. 2 teaspoons chili powder. 1 teaspoon garlic powder. 1 teaspoon paprika. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: In a bowl, mix olive oil, lime juice, chili powder, garlic powder, paprika, salt, and pepper to create the marinade. Add shrimp to the marinade, ensuring they are evenly coated. Allow to marinate for at least 30 minutes in the refrigerator. Preheat the grill to medium-high heat. Thread marinated shrimp and pineapple chunks alternately onto the soaked skewers. Brush the skewers with additional marinade before placing them on the preheated grill. Grill skewers for 3-4 minutes per side or until the shrimp is opaque and pineapple has a nice char.
