Ingredients: 2 cups fresh strawberries, hulled. 2 tablespoons powdered erythritol. 1 tablespoon lemon juice.
Instructions: Preheat oven to 170F 75C. Line a baking sheet with parchment paper. In a blender, puree the strawberries, powdered erythritol, and lemon juice until smooth. Pour the mixture onto the prepared baking sheet and spread evenly into a thin layer. Bake in the preheated oven for 4-6 hours, or until the fruit leather is dry to the touch but still slightly tacky. Once cooled, cut the fruit leather into strips using kitchen scissors. Roll each strip tightly and store in an airtight container.
